I love eating leftovers the next day because I save myself time by turning dinner cleanup into packing the next day’s lunch boxes and let’s face it, life is just plain easier when you only have to worry about providing a healthy breakfast & dinner! Real food can be easy! Let’s begin, shall we?

I always look forward to your meal plans! Unfortunately, I have really been struggling with how to adapt them to my family’s schedule: both my husband and I work 12 hr shifts as RNs, but not always on the same days. On my days off, I always do a meal that provides leftovers, but always seem to fall short at the end of the week. Do you or any other readers have suggestions for cramming more cooking into one or two days? Thanks!

I just found your blog and am really enjoying all your great info and suggestions. This meal plan looks great, though for us right now, it’s a little heavy on the grains. Your recipes look delicious so I’m going to save them for later. I do have a question… I’ve always wondered if food bloggers use their meal plans, so do you use your own meal plans? Is this what you’re family will be eating this week? Thanks again!
