Don’t ‘cha just LOVE popsicle recipes?
Since we are already melting our faces off here in Arizona, I am breaking out the 10 ultimate popsicle recipes today. Holla to other folks tryin’ to survive the heat!
As I sat and twiddled my thumbs, trying to use my brain to figure out the best popsicle recipes to share with ya’ll, I decided I’d better go big or go home. Do it old school, and bust out all the delicious popsicle recipes I knew.
We love our natural lifestyle, it’s made a world of difference in our health. We make food from scratch, use essential oils, and practice sustainable farming.

Ingredients

Mix coconut milk, lime juice & zest & honey in a blender/food processor.

Pour into popsicle molds or cups and freeze for 6+ hours.
-
Before eating remove from mold & roll in chopped nuts.
Ingredients
- 10 peaches
- 2 TBS honey (more if your peaches aren't that sweet) -- Here's where I buy it
- 4 sprigs of fresh lavender or 2 drops Lavender essential oil
Instructions
-
Mix peaches and honey in a blender/food processor.

Add the leaves from the sprigs of lavender & stir with a spoon.

Pour into popsicle molds or cups and freeze for 6+ hours.
Ingredients
- 4-5 bananas
- 2 cans of organic coconut milk
- 1/2 tsp pure vanilla extract
- 1/2 tsp salt
- 1 c chocolate chips
- 1/2 c coconut flakes
Instructions
-
Mix bananas, coconut milk, vanilla, & salt in a blender/food processor.

Blend till mixed.

Toast coconut flakes in a pan over medium heat for about 5 min.

Pour liquid mixture into popsicle molds, top with toasted coconut, and freeze for 6+ hours.

Before eating, slowly melt chocolate chips in a glass bowl over a saucepan of boiling water, then dip into chocolate and freeze for 5 minutes.
Ingredients
- 6 cups fresh or frozen strawberries
- 3 cups organic vanilla full-fat yogurt (or buy plain and add some honey & vanilla)
- 1 cup macadamia nuts , chopped
Instructions

Mix strawberries in a blender/food processor.

Layer yogurt and pureed strawberries in popsicle molds and freeze for 6+ hours.

Remove from molds and roll in macadamia nuts.
Ingredients
- 4 cucumbers
- 2 sprigs of fresh mint or 2 drops of peppermint oil
- 1 squeeze of fresh lime juice
- 3 TBS honey
Instructions
-
Mix cucumbers in a blender/food processor.

Strain pureed cucumbers through a strainer.
-
Mince 6-8 mint leaves and blend with strained cucumber "juice".

Add squeeze of lime juice & honey.
-
Place a mint leaf in each popsicle if desired.
-
Pour in popsicle molds and freeze for 6+ hours.
Ingredients
- 6 eggs
- 1 c organic cane sugar or coconut sugar
- 2/3 cup fresh lemon juice
- 1 TBS lemon zest or 20 drops lemon essential oil
- 8 TBS butter
- 1/2 cup cream
- 1/4 cup organic cane sugar or coconut sugar
Instructions

In a glass bowl over a saucepan of boiling water, whisk eggs, 1 c. sugar & lemon juice.

Stir constantly until temperature reaches 160 degrees.

It should be nice and thick by now.

Remove from heat and mix in lemon zest & butter.
-
With a mixer, mix on high cream & sugar until whipping cream forms.
-
Layer the lemon curd & whipping cream, then pour in popsicle molds and freeze for 6+ hours.
Ingredients
- 6 fresh oranges
- 3 sprigs of fresh rosemary
Instructions

Juice the oranges.

Add the leaves from the sprigs of rosemary and pour in popsicle molds and freeze for 6+ hours.
Ingredients
- 2 cups (16 oz.) cream cheese
- 4 TBS whole milk
- 6 TBS maple syrup
- 5 cup of any mixed berries
Instructions
-
Puree mixed berries in blender. Pour in a bowl and set aside. Blend cream cheese, milk & maple syrup. Fold the berry mixture into your cream cheese mixture and pour in popsicle molds and freeze for 6+ hours.
Ingredients
- 4-5 natural cane sugar root beer soda
- 1/2 c cream
- 2-4 TBS organic sugar or coconut sugar
Instructions

In a mixer, blend whipping cream while adding sugar until whipped cream forms.

Drop spoonfuls of whipping cream in popsicle mold & pour rootbeer soda on top. Freeze for 6+ hours.

We just made the fudge popsicles and are putting them in the freezer now. I have two kinds of molds…ring pops and a push up mild, so we had leftover liquid. It made the perfect breakfast smoothie…I added a frozen banana, frozen spinach, vegan powder, and water. Everyone is happy!!

Thanks for the recipes. I had trouble with the root beer foaming up over my popsicle molds. Any suggestions to help with that? I almost wondered if it would work better to do the soda 1st and then the whipped cream.

I haven’t tried these but it stands to reason that flat rootbeer would be less tempramental, and wouldn’t taste different once frozen. Maybe a good use for leftover soda? (in the 2 liter, not in children’s cups/cans, yuck!)

its best to open the soda and let it sit in the fridge for an hour. the pour and leave about a 1/4 inch room at the top of the mold to expansion

Stick the tip of one of your fingers in the mold as you pour and it will keep it from foaming so bad. First job was a soda jerk. That was 50 years ago.

I have tried Banana Colada and Fudgsicle Pops, but I guess the mix separates before it’s frozen so I get a more “ice” part on the top and a more “creamy” part on the bottom. It has always happened when I make popsicles, do you have any secret to avoid it?

I don’t know if it’s a secret, but I have noticed some areas of my freezer freeze faster than others. Before a long trip I freeze a bunch of water bottles for the ice chest. The next day some will still be liquid while others are frozen solid. You might try something like that to discover which areas of yours freeze fastest, then put your popsicles there so they can get frozen before they have time to separate. I think it depends on how full the freezer is as well. It takes longer to freeze liquids when it is emptier.

I’ve only made the fudgesicles… like 4 times! So yummy. I highly recommend adding some cocoa nibs to the molds before and after you pour the mixture in; gives a nice crunchy flavor. The recipe makes so much that I also tried freezing it in tupperware to make “fudgesicle ice cream.” Again, sprinkle some cocoa nibs and coconut on top = I ate so much that now my stomach hurts. But so worth it.

I had made 8 out of the 10 recipes when I wrote before. Since I commented above, I have made the lemon meringue. Good gracious me. They took a lot of prep but, man, were they worth it. My son says that those were his favorites.

If you dont have macadamia nuts for the key lime popsicles. Can you use another kind of nut instead, walnuts, almonds or pecans?

Thank you very much! I hosted a fancy popsicle party and the kids and adults alike were raving! I noticed that the rootbeer float popsicles required 2 normal-sized glass bottles of rootbeer to fill my 10-count popsicle mold. I think the recipe would probably work best if you let the rootbeer get a bit flat first, fill the molds, then add the whipped cream last. (My opinion.) I want to try the cucumber mint popsicles again using pureed and unstrained cucumber. I also needed a bag of oranges to fill my set of 10 popsicles for the orange rosemary ones. I found the chocolate coating on the banana ones difficult to execute, next time I’d skip the coconut, stir choc chips into the banana puree and try a thin layer of melted chocolate at the base of the popsicle. About 6 peaches was all I needed to fill up my mold of 10 for the peach lavender ones. I’m still a bit confused about what the definition of a “sprig” is when we are talking about lavender. Thank you so much for these ideas!
